Well, friends, I’ve been doing the gluten-free thing for a couple weeks now, and here are my observations: #1: I love gluten. Of course, I don’t actually love it, but it’s in a lot of things. Things that I grew up eating and have emotional attachments to and am not likely to ever want to give up permanently. Things like meat loaf and chicken and dumplings and Samoas.
